Quick Breakfast Recipes

Fiber One Yogurt Bran Muffins
Ingredients: 
1 cup of Fiber One cereal
1 egg slightly beaten
1/4 cup of oil
12 oz of Greek Yogurt
1 1/2 cups Whole Wheat Pancake Mix
1/3 cup packed brown sugar
1 tsp baking soda
1/2 tsp of salt
1/3 cup of fresh blueberries
1/3 cup of crushed walnuts
2 tablespoons of shredded unsweetened coconut

Heat oven to 400* degrees.  Use foil muffin liners to line the muffin tin.  Put cereal in a gallon Ziploc bag and crush the cereal.  In a medium bowl, stir egg, oil, and yogurt.  Stir in cereal and remaining ingredients (except berries) until moist.  Then gently stir in berries.  Divide the batter evenly among 12 muffin cups.  Bake for 18-20 minutes or until golden brown.





Easy Tex-Mex Egg
Ingredients: 
Thin slices of turkey meat
Egg substitute (1/4 cup = 1 egg)
Fresh salsa
Salt and pepper
Green peppers
Green onions
Low fat shredded cheese

Heat oven to 375* degrees.  Grease muffin pan and line the sides of each cup with a thin slice of turkey.  Add about 3 pieces of diced green onions and 3 pieces of diced green peppers to each cup.  Add 1 egg to each muffin cup and season with salt and pepper.  Add 1tsp of fresh salsa to the middle of each egg and bake for 10 minutes.  Then take the muffin pan out and top with shredded cheese.  Return to the oven for 5 more minutes.
